Christmas & the living is easy!
The office wind down is done and we had a meal last night in an absolutely wonderful restaurant called Tante Zoe’s, where we had their Christmas Dinner Menu. Definitely worth going if you have time and the inclination.
Making mince pies
I generally don’t post about things like this but I thought that seen as others have done a good deal of cooking recently, a little image of the mince pies I have been helping to cook most of the day (Blathnaid does most of the hard work) wouldn’t hurt.

I am sure I will post before Monday but just in case:
Seasons Greetings to everyone.
Still cooking,

Yum. These look wonderful. I like sweets in small sizes and I love mince pie. (Well, truth be told, I like hard sauce, which is the reason the mince pie exists.) Were they hard to make? xo, BL
BL,
Funny part is that in some ways they were and others not really.
Blathnaid is vegetarian so we made our own mincemeat! Vegetarian Suet, apples, sultanas and who knows what else all combined together making about 8 jam jars! Then she made the pastry and yesterday we spent a few hours production lining the process, she rolls and cuts the pastry, I filled the pies, she cut lids and small trees, I egg up the tops and then into the oven!
We are still talking so that part went well!

I’m glad to hear about the still talking part! Merry Christmas dear Eoin, BL
I see that this is a blog from last year, but the mince pies still don’t change. Looks good- I can’t wait until xmas comes so I can get loads of mince pies in my tummy.
Hi Eoin
